It's soup season, and I-promise-to-eat-healthier-this-year resolution season, so I've combined the two to create a flavorful Roasted Carrot Soup recipe. Like all good vegetable-centric soups this one is easy to make, healthy, and amazingly tasty. The addition of potatoes instead of heavy cream provides thickness and creaminess to the soup without unnecessary calories, so if you've made a plan to east healthier this year, this soup is for you.
Garnishes are a great opportunity to play up your favorite flavors, and to add a variety of textures to a smooth, velvety soup! Here I took advantage of citrus season by adding fresh lemon zest, which nicely balances the roasted root vegetable flavor of the soup. For more garnish suggestions, visit the full recipe post here.
I hope you'll enjoy this satisfying winter soup! A big thank you to Katie for inviting me to share my latest recipe on Twin Stripe!
