This time of year is so busy and so hectic. Running a retail driven business during the holidays makes for very little free time, and free time is usually when I find time to cook. So, I admit it, I've skipped many a meal lately in the blur of it all. And those meals I've eaten have been rather lackluster, or yes, slightly on the processed, packaged side of things. 

But then I remembered just how easy (and fast!) biscuits are to make. Sure, they're not totally healthy for you to eat all the time... but they're delicious, and fast, and they didn't come from a box. This recipe for Jalapeño & Cheddar Cornmeal Biscuits from Spoon Fork Bacon is my new go-to savory treat. Next time I'll add a little extra jalapeño for an added kick (I'm a big time fan of the spice!) but they're perfect as is. They're ready in a jiffy and super tasty. And even better, chances are pretty good you have most of these ingredients in your fridge and pantry already. Enjoy!
